My favorite season by far is summer and one of my favorite things about summer is the food that we often enjoy during this season! I love being able to grill out on a regular basis during the summer. Our food always ends up tasting the best if its grilled, couldn’t tell you why, but its fail proof. So with the summer season approaching and warm weather days frequently occurring, I thought I would share my current favorite summertime meal with you! I actually stumbled upon this while searching for recipes on Pinterest from a blogger called I Will Not Eat Oysters. I highly encourage you to check out her blog and instagram for recipe inspiration!
I did make a few alterations to the recipe just with what I had in the fridge at the time and it turned out wonderfully. For the tzatziki sauce I used Siggi’s 0% milk fat plain and it was delish! Definitely my favorite yogurt brand for just about everything. Give it a try if you haven’t, I promise there will be no regrets from that decision. As my side instead of making basmati rice like the recipe calls for I subbed in millet. I had never actually had millet before but it was pretty darn good. It reminded a lot of a mix between quinoa and couscous. Overall such a good meal and I have already made it multiples times in the last month!
