Since it is Sunday, I thought it only fitting to talk a little about something I have started incorporating into my weekly schedule. Sunday food prep! Taking the time to do this on a Sunday or just a day off has helped so much in my efforts to eat healthier. During the week, when healthy options for meals and snacks are readily available, the choice to eat well is so much easier! Am I right? I try to mix it up whenever I food prep but I definitely have my staple favorites that I include every time. Here are some of my favorites:

  • Steel Cut Oats – always good to have so you can just pop them in the microwave when you’re tight for time but still want to fit in a good filling breakfast! Throw some berries, peanut butter, and cinnamon on top!
  • Cooked Vegetables – I love to either steam or roast a big bowl of mixed veggies. Some of my favorite veggies to include are onions, zucchini, broccoli, and carrots. They are so good to use as a quick side with your lunch, dinner, or even as a snack!
  • Baked Sweet Potatoes – I love sweet potatoes and could definitely eat them every day! I love them for breakfast with peanut butter or dinner as baked fries. I always have them on hand!
  • Boiled Eggs – I love snacking on boiled eggs or adding them to my breakfast or salad for lunch. Great thing to have on hand if you need a quick protein snack!

I have plenty more favorites that I could keep on sharing but those are just a few of my staples! I definitely encourage you to try food prepping. Just set 2-3 hours aside on a free day and start cooking! It will make eating for the week 100 times easier, I promise! I’d love to hear about your favorite things to prep too!
