I wanted to share one of my favorite snacks with you! I ate my first plantains during a mission trip in Guatemala. My host family made the most delicious foods and plantains were served at almost every one. I have now made them a staple part of my diet and incorporate them into breakfast, snack, and dessert. Try them out and let me know what you think. Recipe is below!

INGREDIENTS:

  • Coconut oil
  • Cinnamon
  • Coconut sugar
  • Plantains

Warm a pan to medium on the stove and melt about 1-2 Tbs of coconut oil. Once melted, add sliced plantains. Sprinkle enough cinnamon and coconut sugar to coat all of the plantain. Cook, stirring frequently, until the plantains begin to brown. Add to your breakfast, eat as a snack, or top with vanilla ice cream!
