There is just something about pancakes on a lazy Saturday morning, I mean lets be honest, any lazy day morning. I think all joking aside I could eat pancakes everyday of the week. What I love about these pancakes is they are super simple and gluten free because all it takes is 1 banana and 2 eggs for 1 serving of deliciousness. They are still so filling and leave me satisfied without feeling yucky for eating lots of carbs. I throw the banana and eggs into my blender to make a smooth batter and am ready to go. I love to get creative with my toppings from fresh fruit to hazelnut spread or peanut butter and of course some maple syrup or agave nectar to top it off.
