There is just something about pancakes on a lazy Saturday morning, I mean lets be honest, any lazy day morning. I think all joking aside I could eat pancakes everyday of the week. What I love about these pancakes is they are super simple and gluten free because all it takes is 1 banana and 2 eggs for 1 serving of deliciousness. They are still so filling and leave me satisfied without feeling yucky for eating lots of carbs. I throw the banana and eggs into my blender to make a smooth batter and am ready to go. I love to get creative with my toppings from fresh fruit to hazelnut spread or peanut butter and of course some maple syrup or agave nectar to top it off. Try them out and share your favorite toppings! I used coconut cream, cinnamon, and frozen rasberries for these beauties.
